Banana Oatmeal with Ricotta, Honey and Chia

Ingredients:
1 cup McCann’s Steel Cut Irish Oatmeal Quick Cooking Rolled Oats
1 1/2 cups soy milk
1 cup water
2 teaspoons vanilla
Pinch of sea salt
dollops of fresh whole milk ricotta
1 banana, sliced
drizzle of honey


Directions:

1.  In a medium saucepan, combine the oats, milk and water.
2.  Bring the mixture to a low boil and then simmer over medium low heat, stirring often until the liquid has been absorbed and the oats have thickened, about 3 minutes.


3.  Remove from the heat and stir in the vanilla and salt.
4.  Top with a dollop of ricotta, bananas plus a drizzle of honey.
5.  Finish with chia seeds.

  60. I've been eating oatmeal for breakfast every morning for the past 5+ years and just recently tried steel cut oats. I fell in love immediately with the texture and nuttiness. My favorite recipe lately has been diced pear, cinnamon, nutmeg, candied pecans, dates and honey.
