Creamy Mushroom Fettuccine with Chicken

My kids have a recent love for mushrooms. They are little morsels of fungi waiting to be picked by little fingers and then popped into their mouths. Who knew? They are also huge fans of pasta...seriously could eat it everyday if possible. If you follow me on Instagram you probably know that I love to eat but seldom cook. But since Hubs has started up with his monthly travels, I decided to whip up something quick and delicious during the week.

Using boneless, skinless chicken breasts during the week for dinner is quite helpful since I have minimal time after work. Also, after having kids we tend to search out the better for you option in food choices. It is definitely true that once you become a parent, it's all for them. Ok. Maybe 95% for them and 5% still for me. However, in the case of the new Foster Farms® Simply Raised chicken, it's a win-win for all. I picked up some beautiful breast fillets at our local supermarket along with ingredients for a surprise dinner with the hopes that I would get super mom status!

Have you checked your chicken recently? 

  • 16 ounces Fettuccine noodles
  • 1 pound baby Bella mushrooms, sliced
  • freshly ground sea salt and black pepper to taste
  • 4 tablespoons chopped fresh parsley leaves
  • 4 cups baby spinach
  • 2 jars of Alfredo Sauce
  • ~2 lbs Foster Farms® Simply Raised chicken

1.  Preheat skillet over medium-high heat. If skillet is not nonstick, lightly coat with PAM cooking spray or 2-3 teaspoons of olive oil.
2.  Grind some salt and pepper over both sides of the chicken breasts. Place chicken in skillet. 
3.  Reduce heat to medium and cook until the meat is no longer pink and juices are clear - about 8-12 minutes. Occasionally turn so it browns evenly. Remove from skillet and set aside.
4.  Add mushrooms, onions and garlic into skillet and brown for a few minutes. Stir in baby spinach until wilted.
5. Pour Alfredo sauce into the skillet and let simmer over low heat for a few minutes. Add the fettuccine and gently toss.
6.  Slice or cube chicken and add to sauce. Or you can opt to just slice and place on top of the pasta when plating. Since I end up having to cut up the chicken for the kids anyway, I thought it would be simpler if I cut it while cooking.
6.  Cook noodles according to the package, drain well then add to pasta.
7. Serve with a bit of chopped parsley for garnish.
