I love food. It's my language. It brings friends and family together for happy gatherings. This summer my friends are headed to Italy and neighboring countries and guess who is jealous? They will be feasting on amazing food and taking in the sights. Since I will have to wait a few more years until the kids are older to endure the longer flights, I'll have to throw a Tuscan Summer Party!




Since my only trip to Italy was to snowboard the slopes of Italy, France and Switzerland, I can only imagine visiting during the lush summer months. My imagination is nourished mainly from movies such as Under the Tuscan Sun and similar where life is simple yet full of amazing eats. I was inspired by Bertolli® Tomato & Basil sauce to create a simple pasta dish that could be enjoyed by both children and adults alike.

PRINT RECIPE

Ingredients:
  • 8 oz angel hair pasta
  • 1 bunch of fresh basil leaves
  • 1 24 oz jar of Bertolli Tomato & Basil sauce
  • 1.5 lbs of grape tomatoes
  • olive oil
  • salt & pepper to taste


Directions:

1.  Bring water in a medium pot to boil and cook pasta as instructed. 
2.  Heat a large pan to medium and drizzle a bit of olive oil. Rinse the grape tomatoes and add to pan. 
3.  Chop basil leaves and add about 5/8 to the pan.
4.  Add the Bertolli sauce to the pan and bring the heat down a notch.


5.  Grind fresh salt and pepper on top to taste.
6.  Add the pasta to the pan and gently toss with tongs.
7.  Serve in a bowl with a short well and top with a few chopped basil leaves.

The kids absolutely love this pasta and I can't wait to whip it up again to share with friends.
