How to Eat Healthy Over the Holidays + Sweet Potato Harvest Recipe @SamsClub #SimplyHealthy #ad

Holidays usually mean feasting with family and friends and indulging in decadent foods. While all is fine and dandy during day long nibbling and noshing, usually the result is gaining some weight. Did you know that you can easily put a twist on your favorite traditional dishes to make them healthier? Sweet potatoes combined with marshmallows and brown sugar is my weakness but since Hubs is a health fanatic, I need to tweak my usual side dish. I picked up a huge bag of sweet potatoes (plus other ingredients) at Sam's Club to try healthy eating for the holidays.



I found the perfect recipe to recreate in the Sam's Club Healthy Made Simple Magazine. Did you know that 1 cup of cubed sweet potatoes contains just 114 calories but packs a whopping 377 percent of your daily intake of vitamin A? Fat is also practically nonexistent in the sweet potato root so you can snack on it without guilt. The sweet potato also includes 52% of the daily recommended intake of vitamin C and 50% of manganese. Who knew that this vegetable is such a powerhouse of nutrition?


Since we actually hosted Thanksgiving for the first time ever at our home, it was the perfect time for me to make the Sweet Potato Harvest Recipe.

PRINT RECIPE

Makes 4 servings (Per serving: 265 calories, 25g carbs, 7g fat, 2g protein)

Ingredients

  • 2 medium-sized sweet potatoes, cubed
  • 3 medium-sized white potatoes, cubed
  • 1 small onion, chopped
  • 4 tablespoons melted butter
  • 1/2 cup zesty Italian dressing
  • 1 tablespoon hot sauce (more if desired)
  • salt and pepper to taste
  • 1 medium bell pepper, chopped
Directions

1.  Preheat oven to 350 degrees.
2.  Mix all ingredients together in a 9 x 13-inch greased casserole pan.


3.  Bake covered for 1 hour.
4.  Remove top and stir.
5.  Bake an additional 15 minutes, or until tender and browned.
6.  Add fresh herbs on top as garnish.
*Tip: You can also cook this recipe on top of a stove in a skillet, if pressed for time.


Everyone enjoyed this dish and it was polished off - no one missed the usual marshmallow and sugar laden sweet potato dish I usually make. It's so hearty and delicious that I am going to make it for Christmas as well as throughout the year as a side.

  3. It's hard to find savory recipes for sweet potatoes. You usually find casseroles and pies with so much sugar added. But, sweet potatoes with onions and white potatoes sounds soo so good.
