With the arrival of spring, the weather has been very conducive to grilling, which my family really enjoys and I find easy to prep. One of our favorite things to do is to grill fish or vegetables and pair it with our favorite chimichuri sauce. It’s quick, simple, and packed with flavor for a quick and healthy meal.
- 2 cloves garlic
- 1 cup parsley
- ¼ cup cilantro
- ¾ tsp red pepper flakes
- ½ cup olive oil
- ½ tsp salt
- 1/3 cup red wine vinegar
- black pepper to taste (optional)
- Peel the leaves of the cilantro and parsley and mix all ingredients together in a blender and blend on low. I prefer my handheld blender for this because it’s the perfect size and is very convenient to use.
- Pour into serving bowl and serve with your favorite grilled fish or seafood of choice. Yup, it’s that simple!
