10 Minute Cinco de Mayo Party Platter

I love quick and easy snack and dinner options for my family and since we enjoy Mexican food on an almost weekly basis, it was really fun putting this platter together and it literally took only 10 minutes!



Ingredients:
  • Assorted Old El Paso Frozen Foods (I chose Chicken Fajitas, Chicken Quesadillas and Chicken Burritos)
  • Tortilla Chips
  • Fresh Salsa
  • Small Corn Tortillas

Directions:


1. For the fajitas, just heat up your non-stick skillet to med/high heat and plate the entire package in the pan. Stir while it heats for about 9-10 minutes. 

2. In the meantime, place the quesadilla on a plate and cover with a paper towel. Heat in the microwave for 3-4 minutes. Do the same with the chicken burritos but heat for about 5 minutes.


3. Grab a large platter and start plating. Cut quesadillas in half as well as the burrito. Scoop fajitas onto platter. Place tortillas and chips in between and salsa in the middle. Voila - ready for a fiesta in 10 minutes or less!


Who knew how delicious the Old El Paso frozen foods could be? I will definitely be picking up some more as they are super easy and quick to prepare without any sogginess.
