Party Appetizers | Stuffed Mushrooms {Recipe}


Appetizers are a lot of fun; simple quick bites packed in with taste and sometimes quite filling.  One of my new faves is an old classic: stuffed mushrooms.  These mushrooms can be the opening to any Italian main course or eaten as a snack.  I've enjoyed many mushrooms, but all of them had a little something I didn't like so I've blended all my favorite ingredients to create my own favorite stuffed mushrooms.  Feel free to modify to use your favorite cheeses instead of the ones I prefer.


Stuffed Mushrooms

Ingredients

12 whole mushrooms
1 tablespoon vegetable oil
1 tablespoon garlic
¼ cup shredded jack cheese
1 cup shredded cheddar cheese
¼ teaspoon ground black pepper
¼ teaspoon salt
½ tablespoon finely chopped onions
¼ teaspoon chili powder
2 tablespoons bread crumbs

1. Preheat oven to 350 degrees F (175 degrees C). Clean mushrooms with a damp paper towel. Carefully break off stems. Chop stems extremely fine, discarding tough end of stems.

2. Heat oil in a large skillet over medium heat. Add garlic, onion and chopped mushroom stems to the skillet. Fry until any moisture has disappeared, taking care not to burn garlic. Set aside to cool.

3. When garlic and mushroom mixture is no longer hot, stir in cheeses, black pepper, salt, chili powder and bread crumbs. Mixture should be very thick. 

4. Brush the top side of mushrooms with olive oil and flip upside down onto baking sheet.

5. Using a little spoon, fill each mushroom cap with a generous amount of stuffing. Arrange the mushroom caps on prepared baking sheet.

6. Bake for 20 minutes in the preheated oven, or until the mushrooms are piping hot and liquid starts to form under caps.

  1. These look absolutely delicious! I made seafood stuffed mushrooms once and I think they turned out pretty well. I didn't have a recipe so I just kinda threw things together. I'd love to try this recipe though.

  3. I seriously love stuffed mushrooms sooo much. My husband hates them, so I rarely make them. Gonna just do it and make him something else.
