Did you mother make you pancakes for breakfast when you were little? Mine did and every time I visit "home" she whips up a batch of these amazingly classic pancakes that are just delicious even without any toppings.
The ingredients are simple in creating these classic pancakes and you can even add in your own fillings if you'd like. My mom made them for us when we were visiting last week and let me tell you I filled up on at least 4-5 each day! They are so delicious that I don't even need syrup.
- 1 cup all purpose flour
- 1 cup milk
- 1 egg
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 2 tablespoons butter
- Whisk together flour, milk, egg, sugar and salt until moistening with some bubbles forming. I've learned to accept that it is ok if there are small lumps.
- Melt some butter in a hot skillet and spoon desired amount of batter and spread to form a round circle. Cook until you see a few bubbles (1-2 min) and then flip over until brown (another 1-2 min).
- I prefer smaller pancakes. You can also substitute coconut oil for the butter if you'd like. I prefer good old fashioned butter.
- You can add in blueberries, chocolate chips, etc. to the batter if you like additional flavor.
