Minute® Rice: Quick & Simple Dinner for the Family #LoveEveryMinute @Minute_Rice

I rarely cook.  Not because I don't enjoy it but because I really don't have the time.  When I come home from work I feed Mason, bathe the kiddos, wash the dishes from the prior day and then eat the dinner Hubs picks up or cooks.  When and if I do cook, I usually like to try new recipes.  I looked on MinuteRice.com there were over 400 recipes to choose from.  There were recipes to make a side dish or main meals.  I decided to try the Cheesy Tuna Dinner because it didn't require too many ingredients and seemed to take little time to prepare.  


Ingredients

1 can (10 3/4 oz.) condensed cream of mushroom soup
1 1/2 cups milk
2 cans (6 oz. each) tuna fish, drained and flaked
1 cup frozen green peas, thawed
2 cups Minute White Rice, uncooked
1 cup shredded Cheddar cheese
canned French-fried onions or crushed potato chips (optional)
salt/pepper to taste




Directions
Mix soup and milk in medium saucepan.  Bring to a boil over medium heat, stirring frequently.  Add tun and peas; mix well.  Return to a boil.  Stir in rice and cheese; cover.  Reduce heat to low; cook 5 minutes.  Stir until cheese is melted.  Add salt and/or pepper to taste.  Garnish with onions or chips, if desired.  




I decided to substitute Minute 100% Whole Grain Brown Rice for the white as we usually eat brown, if possible.  However, brown rice takes about 40 minutes to cook in our rice maker so the thought of a meal taking 20 minutes or so to make, including rice cook time (10 minutes!) is very appealing.  Plus: Minute Brown and Rice Rice are both gluten free.  The recipe was super easy to follow and the meal was ready in no time.  Perfect for dinner for Kenzie and I and a late night snack for Hubs (late flight back from NY business trip).  Kenzie really enjoyed this meal and even ate all the peas!  
I am definintely going to try some other quick and easy recipes using rotisserie chicken (Hubs loves these from the market) and lots of veggies with Minute Rice.  They even have a selection of Minute Steamers that look yummy!

  7. This looks easy and really yummy! Love that it's got tuna in it, and you could add more veggies to make it even healthier! I think my hubby would love the chips. :)
