
I love donuts and can easily down a dozen Krispy Kreme donuts in one sitting. However, since I should try to be healthy during my pregnancy I was super excited to find fonuts!
Here are two that I want to try making.
Lemon Donut Recipe
Serves: 6
Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients
| 1 | c | white rice flower |
| 1 | c | almond meal (or fine almond flour) |
| 1 | t | baking powder |
| 1⁄2 | t | salt |
| lemon zest | ||
| 1⁄2 | c | vegetable oil |
| 1 | c | brown sugar |
| 2⁄3 | c | soy milk |
| 1⁄2 | lemon, juiced | |
| 1⁄2 | t | vanilla |
| FOR THE GLAZE: | ||
| 1 | T | lemon juice (or as needed to make thick glaze) |
| 1⁄2 | t | powdered sugar |
Instructions
Mix dry ingredients including lemon zest and set aside. Mix all wet ingredients except vanilla in a separate bowl and add to dry ingredients. Add vanilla after mixing dry ingredients. Bake at 350 degrees in donut pans for 12-15 min or until light and fluffy to the touch.
Rosemary–Olive Oil Donut Recipe
Serves: 24
Prep Time: 10 minutes
Cook Time: 10 minutes
Ingredients
| Cooking spray | ||
| 2 | c | all-purpose flour |
| 3⁄4 | c | sugar |
| 2 1⁄4 | t | baking powder |
| 1 | t | salt |
| 2 | large eggs | |
| 3⁄4 | c | milk |
| 1⁄4 | c | canola or vegetable oil |
| 1 | c | olive oil |
| 2 | T | coarsely chopped fresh rosemary |
| zest from 3⁄4 of a lemon | ||
| juice from 1/2 of a lemon | ||
| 1⁄4 | c | pine nuts, toasted |
Instructions
1. Preheat oven to 350°f. Lightly coat two 12-slot mini doughnut pans with cooking spray. In a large mixing bowl, combine flour, sugar, baking powder, and salt. 2. In a medium mixing bowl, whisk together eggs, milk, oils, rosemary, lemon zest, and lemon juice. Make a well in the center of the dry ingredients and add wet ingredients. Mix until just combined (mixture will be lumpy).
3. Spoon batter into all slots on both pans, each 2⁄3 full. Bake, rotating pans halfway through, for 10 to 12 minutes or until lightly golden. Let cool slightly.
4. Meanwhile, in a spice mill or coffee grinder, pulse pine nuts until they form a powder, then place in a shallow pan. Turn doughnuts out of pan, lightly spray tops with cooking spray, and dip into pine nut powder.

let me know if they taste different I cant stand baking things before I know people have tried it and made edits that are needed, too much effort for nothing
